在家煮香濃豆漿,製作好吃豆花 Homemade Soy Milk and Tofu Pudding
材料:黃豆300g,水2400cc,豆花粉用量請依照包裝上說明酌量添加I
ngredients: Soybeans 300g, water 2400 cc, tofu pudding powder (please follow the instructions for use on the packet)
做法:1.先把不完整或不飽滿的豆子去除再洗過之後泡水,水要蓋過豆子,夏天約泡4小時,冬天約泡6小時2.先倒入適量的豆子到果汁機中,
再準備一瓶礦泉水倒入約一半的礦泉水後開始攪碎,絞碎到無顆粒狀,再準備鍋子上面蓋上紗網,
把絞碎後的生豆漿倒入後使勁扭乾3.再準備另一個鍋子,把另一半礦泉水加入煮開後另加入處理完後的豆漿,一邊加一邊攪拌直到煮滾,
這樣處理就不會讓豆漿煮到溢出來,煮滾後讓豆漿溫度降約80~85度即可4.再來準備桶鍋倒入市售豆花粉、水,一定要攪拌均勻後,
馬上把煮完後的豆漿立即沖入,之後不要動鍋子靜置,大約等十分鐘後就會凝結,凝結之後把泡沫撈起,這樣就完成水水嫩嫩的豆花
Preparation Method:1. First remove deformed and stunted beans, wash the beans then soak in water with enough water to cover the beans. Soak for around 4 hours in summer and around 6 hours in winter.
2. Add a suitable amount of beans into the food processor, have a bottle of mineral water ready and pour in around half a bottle of water into the processor. Blend until smooth. Prepare a pot with a straining cloth on top, pour the blended bean liquid onto the cloth then wring the cloth to get all the liquid out.
3. Prepare another pot and add in the other half bottle of mineral water, boil the water and add in the strained soybean liquid. Pour and stir until it boils, this way the soy milk will not boil over. After the soy milk has been pought to a boil, reduce the heat until around 176-185 °F.
4. Prepare a high-sided pot and put in the tofu pudding powder and water, mix until completely blended then immediately pour in all the soy milk at once. Do not move the pot, let rest for around 10 minutes while it sets. Once set, remove the bubbles on top, at which point your soft and tender tofu pudding is ready!
